  BROWNIE RECIPES Fudgy Vegan Brownies


Allergic to flour, milk etc.? Try this allergen-free brownie recipe.

Ingredients
1/2 cup firm tofu
1/2 cup soy milk
1/2 cup applesauce
1 table spoon vegetable oil
1/4 cup peanut butter (or other nut butter)
1 T vanilla
1 3/4 c sugar
2/3 cup cocoa powder
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup chocolate chips

Directions
  • Purée the tofu and soymilk in a blender or food processor.
  • Add applesauce, oil, vanilla and peanut butter. Mix until smooth.
  • In a separate bowl, combine sugar, cocoa powder, flour, and salt. Whisk to combine.
  • Mix wet and dry, just until combined. Add chocolate chips.
  • Line an 8x8 inch pan with parchment paper, and pour the batter into the pan (it will be thick).
  • Bake at 350F for abut 25 minutes, or until batter is set, and top of brownie springs back when pressed gently.

Side Note
The 8x8 inch pan makes very thick brownies. Try a 9x13 inch pan if you prefer thin brownies.
